CASE NO: 334

OBJECT: Disperse 11% pregelatinized starch into tomato puree in order to increase puree to sauce consistancy.

PROBLEM:

This type of cold water soluable starch lumps up.  Existing low shear  not capable of dispersing starch and shearing lumps.  

SOLUTION:

Model D-6000 Dispershear installed above horizontal mixing tanks.  Starch dispersion is dispersed into water and then gently stirred into puree mixture.

BENEFITS: Mixing time significantly reduced - - no lumps in final product.  High shear hammermill downstream no longer necessary to break up lumps.
