Description
OBJECT:
To produce smooth mixture of corn syrup and gum with water and egg albumen with limited foam.
PROBLEM:
Xanthan Gum forms lumps which are hard to disperse using turbine mixer which induces aeration.
RESULTS:
A C-2-1 Reversible Homogenizer in a 100-150 gal. kettle is able to disperse the lumping and with a limited vortex using the up-mode.
